Little Creek Dressing
Remove and chop the flesh of 1/2 the roasted pumpkin. Set other half aside.
In a large bowl, toss chopped pumpkin, swiss chard, roasted plums, barley blend, Cherry Balsamic & pumpkin seeds. Season generously.
Transfer salad into the second half of the roasted pumpkin, using it like a bowl.
Drizzle dressing on top (to taste.)
Optional: top with your favourite vegan soft cheese & more pumpkin seeds.
WARM PUMPKIN &
1 pumpkin, halved + roasted
Pumpkin seeds, roasted
Wheat, barley & oat blend, cooked
Ontario blue plums, roasted
Swiss chard, chopped & lightly sautéed with Cherry Balsamic
Salt + pepper
